Last year when the Instant Pot was on sale, I decided it was time to buy this ” all-in-one pot ”. The idea of buying an Instant Pot was something I’ve been thinking about for months, and it was time to find out if the Instant Pot is really worth the hype.
I was happy and a little nervous to try out this seven-in-one kitchen appliance once it arrived. Today I am sharing my experience with the Instant Pot. Is it worth the hype?
I thought of reading the best instant pot recipe blogs. That’s why I read so many positive experiences with the Instant Pot that I almost felt compelled to make this work for me too. But I was also doubtful and had some doubts.
What is an Instant Pot?
Do you know what the Instant Pot is? It is a 7-in-1 multi-cooker that can do almost anything. It is a slow cooker, rice cooker, steamer; it has a sauté function, it is also an electric pressure cooker, a “warming pan” and it can even make yoghurt. It is an appliance that replaces the task of seven multiple kitchen appliances. Well! It cooks meals faster and gives the option to choose a programmable start time (read: eat when you are awake and / or when you get home).
This sounds pretty impressive to foodies, doesn’t it? I justified this purchase by convincing myself that I am actually saving space since I couldn’t fit all these seven appliances in my kitchen ….
What I expected from the Instant Pot?
After reading so many positive reviews, I expected the Instant Pot to be a huge time saver. As a plant-based foodie, I dreamed of beans that would be ready in a fraction of the time than expected in a pan on the stove.
Yes, somewhere in the back of my mind, I also expected the Instant Pot to change the life… just a little bit.
Why I Waited So Long to Purchase the Instant Pot?
I thought about it for quite a while before buying another kitchen appliance. The first reason is that I already have so many machines in my kitchen and the Instant Pot is not very small. My kitchen is already quite full, so I wanted to make sure it would be worth a place in my kitchen.
My second doubt was how useful an Instant Pot is for a plant-based foodie like me. I’ve read that the Instant Pot is a huge time saver when cooking meat, but since I never cook meat, I was wondering what the added value would be for me.

My last hesitation was that it would take away all cooking pleasure and that my cooking experiments in the kitchen would disappear. Put the lid on, close it and forget it. How can this be cooking? Where is the tasting while cooking? How about stirring and adjusting the flavor?
How do I start using the Instant Pot?
When the Instant Pot came in, I joined an Instant Pot Facebook group (“Instant Pot Beginners Veg Support”) to ask the most basic questions. But I soon realized that it would also be advantageous to purchase a book to really master all the knowledge. I bought Jill Nussinow ‘s book “Vegan Under Pressure”, and I think it’s a good purchase for plant-based foodies.
I didn’t really start using the Instant Pot until after a month and actually only after this book came in. The Instant Pot is not complicated to use, but I think it is useful to feel comfortable using and a Facebook group and / or book can certainly help with this. In the first few weeks, I had so many questions and uncertainties that I thought I would be one of the few people who just aren’t thrilled with the Instant Pot.
What I didn’t realize is that the Instant Pot is a different way of cooking and just like ( regular) cooking you just need a little time to get the hang of this.
If you are going to use the Instant Pot for the first time with all its functionalities, it can be quite overwhelming, and even a bit intimidating, but my expectations were high. The first time I used the Instant Pot, I expected a miracle. My food would be ready in just a few minutes and would taste delicious. I decided to cook buckwheat to test the Instant Pot. I did everything according to the Instant Pot rules. Closed the lid, checked that the “push button” was in the right position and waited hopefully after the beep went off. And waited. It took the Instant Pot 15 minutes to get to pressure before the real work began.
I waited another 20 minutes. I did a quick “release” (this means you open the push button to let the steam escape) and found a pathetic pile of ” buckwheat puree” at the bottom of the pot. What did I do wrong? Why should this be better and faster than cooking on the stove in an ordinary old-fashioned pan? And if I had let the pressure (the steam) escape naturally (so without a quick “release”), it would have taken even longer. I did not understand. I haven’t used the Instant Pot for weeks after that.
The less pleasant sides of the Instant Pot
What I don’t like about the Instant Pot is the smell of the lid. I want to cook with lots of herbs and spices, and I can’t quickly get the smell out of the cover (the silicone ring in the lid). I can still smell my curry dish for days after using the Instant Pot. Not pleasant. I love that everything in my kitchen is clean and odor-free. What helps is that I now put the lid upside down on the Instant Pot instead of on it. This enables a bit. I’ve read that some people buy a second ring, but personally I don’t mind too much. The pot itself is made of stainless steel, which is really easy and quick to clean.
As a food blogger, you may search for best instant pot recipe blogs. By reading it, you can imagine that I am quite fond of cooking. The cooking experience is slightly less when you cook with the Instant Pot, but there is still some cooking involved. You can also set the timer lower and open the jar in between to taste whether your meal needs more spices, herbs, water and the like. And sometimes I find myself that there is a lot more cooking involved. There are so many possibilities, and I experiment more and feel more creative in the kitchen.
What do I LOVE about the Instant Pot?
After all these months, you can still find my Instant Pot in my kitchen on the counter next to my blender (that’s a decent place in my kitchen). It never occurred to me to put the Instant Pot away. Once I realized that “the magic” of the Instant Pot isn’t so much about saving time (unless you’re cooking beans, oat groats, grains, rice, and the like), it’s more about convenience and being creative, changing something.
From then on, I started trying out more recipes. I found out that the “sauté” function, for example (something I always use now) makes everything so much faster, because it heats the pot and brings it up to temperature. When I cook in the Instant Pot, I always start with the” sauté” function with the lid open. I started simply by just throwing in some vegetables, stock, tomato paste, spices, herbs and lentils, closed the lid and left the house. After 6 hours, I came back.
The Instant Pot keeps food warm for you (I think for a maximum of 12 hours). I have enjoyed delicious meals right after coming home to a perfect temperature. And it tastes like your food has been simmering on the stove for hours. This is helpful. Very. Useful.
I now also make beans every day, deliciously fresh from the Instant Pot. No more pots and it is even better and cheaper too.
After using the Instant Pot almost every day for several months, I can say that the Instant Pot does indeed make cooking faster and easier. Cooking beans, oat groats, grains, brown rice and the like is really quick in the Instant Pot. But a last-minute stir-fry also only takes a few minutes in the Instant Pot. Once you have brown rice with the rice cooker function created in the Instant Pot, it’s hard ever to go back to cooking your (brown) rice on the stove. It is easier, faster, and it is also quick to clean again.
Because I cook every day (often all day), I don’t just use the Instant Pot. I sometimes use it for cooking beans in 10 minutes (instead of an hour), and in the meantime, I cook ‘best instant pot recipe blogs’ on the stove. But when I am away from home, writing for a day or have more people over, I certainly only use the Instant Pot.
It is a pleasure to come home after a day out and have a delicious pot of warm, healthy homemade food at your disposal.
Stews, soups, grains and beans are all done faster and so tasty. The lid closes completely under pressure, so the flavors do not escape, and the result is that your food tastes as if it had been simmering on the stove for hours while you were not even at home. Steaming vegetables is also great in the Instant Pot. I have also noticed that it is easier to cook (thoroughly) without (unnecessary much) oil and salt in the Instant Pot (if that is important to you) and that makes your meal really healthy and plant-based in my opinion.
The convenience lies in the time-saving aspect and the “set it and forget it” function, but even better.
The nice thing about the Instant Pot is that you can really experiment. For example, I recently made quinoa in a Mason Jar in the Instant Pot for the first time, and I am quite impressed with the result and the ease. The result was the lightest quinoa in 11 minutes (steam the quinoa in a Mason Jar for 1 minute and let it rest for 10 minutes with a “natural” release). And I didn’t have to worry about it at all. You also do not have to clean the pot with this method.
I LOVE my Instant Pot beans that I make every day now. No more beans from a glass jar that I used to use for years. When it comes to cooking beans in the Instant Pot, I dare say that this is really a game-changer. Soaked chickpeas take about 12 minutes in the Instant Pot instead of about an hour on the stove. Before I owned the Instant Pot, I actually always bought my beans in glass jars and rinsed them very well under running water to get any added ingredients like salt out. But this is tasty, healthier and cheaper. My next “experiment” is to make yogurt in the Instant Pot.

Is the Instant Pot worth the hype?
This certainly can be if you know how to use the Instant Pot and the best way to find out is just to do it. Search “best instant pot recipe blogs.” Start simple and have no fear because the more I cook in the Instant Pot, the more comfortable I feel and the more different recipes I want to try. It also feels more natural and more effortless over time. I think the time-saving aspect for every household is different and the only way to find out is to put it regularly use too.
My conclusion in a nutshell: cooking in an Instant Pot is different, but I love it. Even if I ever decide never to cook in an Instant Pot again, I will leave it in my kitchen so that I can cook my beans in a fraction of the time. It’s all about convenience and saving time.
- If you love beans, rice, quinoa, buckwheat or want your food to be ready (and at the right temperature) when you get home or wake up, the Instant Pot is incredible.
- If you’re thinking about buying a pressure cooker, slow cooker, steamer, yogurt maker and / or rice cooker, but you don’t have the space for all of this, you’ll really love the Instant Pot.
- And of course, the Instant Pot is great if you find it essential to cook quickly, tasty and easy.
- If the thought “set it and forget it ” sounds like music to your ears, then you will also enjoy the Instant Pot.
- Larger portions for families or when you are doing “meal prepping” (cooking ahead), the Instant Pot is also a valuable addition to your kitchen.
So yes, the Instant Pot enthusiasts are right. It’s not just hype. Is it “life-changing”? A big YES for me. Super handy? Yes, and the more you understand the Instant Pot, the more you will use it.
